On week 4 of (Virtual) Family Dinner, our great friends Lexie & Caden took over as lead Chefs! The two lovebirds met while track-letes at Carroll University (Go Pios!) & have been together ever since. Lexie & I (somehow) survived nursing school together & she currently works as a Neuro ICU RN in Milwaukee, WI & at Carroll (Go Pios!) in the nursing lab. Caden & Ryan played soccer together at Carroll (Go Pios!) & I swear are never, not texting or playing Fortnite with each other. Caden recently landed a new job as an Accounts Receivable Analyst at our alma mater, Carroll University (Go Pios!), where he also coaches the Men’s Soccer Team. Last October we had the pleasure of hosting them in Washington & exploring the Pacific Northwest together with fun day trips to both Portland, OR & Seattle, WA. In November, Caden got down on one knee in front of both of their families & popped the question to Lexie- YAY!!! They have been enjoying engaged life & this Spring, they closed on & move into their first home together! Yes- we have already called dibs on our room when we come home to visit. Ryan & I are overjoyed to both be standing up in their wedding & ringing in the New Year for the future Mr. & Mrs. Pruitt in January 2021.

Ingredients

  • 1 lb. Chicken Tenderloins
  • 1 pckg. Sliced Ham or Deli Ham
  • 2 pckgs. Stuffing Chicken Flavored
  • 4 tbs. Butter or Margarine
  • 1 can Cream of Chicken Soup
  • Provolone or Swiss Cheese, slices

Instructions

  • Preheat oven to 400 degrees.
  • Lightly spray baking dish with cooking spray. Evenly lay out chicken tenderloins.
  • Add a layer of cheese slices on top of the chicken.
  • Add an additional layer of half a slice of ham or deli ham slices on top of chicken.
  • In a small bowl, pour in cream of chicken soup. Fill up half the empty can of soup with water & add to bowl. Mix together. Evenly pour soup mixture on top of chicken in baking dish.
  • Melt butter in microwave. In a large bowl, mix together stuffing mix & melted butter. Evenly sprinkle stuffing over ingredients in baking dish.
  • Cover with tinfoil & bake for 35 minutes. Remove tinfoil & bake for additional 5 minutes. Remove from oven & serve warm on a plate. Pair with a vegetable side.
