For week 5, we welcome our crew’s final chef duo to host & round up the first series of (Virtual) Family Dinner’s- Ben & Abby! The Carroll alumni (Go Pios!) met through mutual friends in college & actually began dating during a season a Family Dinner’s! Lesson learned? Food = love. Abby was a former collegiate tracklete & continued on to pursue a degree as an Occupational Therapist Assistant (PTA) where she is currently preparing to sit for her boards exam. Ben played as a defender on the soccer team in college although one time at a party I asked him “how’s basketball going?!” although I also played soccer & our teams had traveled together before… (What?! He is very tall). After undergrad, Ben stayed a Pio & studied to become a Physician Assistant (PA)! He landed an amazing job in Appleton, WI at a Sports Medicine & Surgery Center where he frequently assists in orthopedic surgeries. Even better news- he just bought a house! The pair are officially settled in together & ready for the memories to come.

Ben & Abby’s Philly Cheesesteak’s
Ingredients
- 0.5 lb Sirloin Tip Steak Thin Cut
- 1 pckg. Provolone Cheese, slices
- 2 Peppers color of choice
- 1/2 a Onion, long slices
- 1 cup Mushrooms, chopped
- Garlic Powder to taste
- Onion Powder to taste
- Salt/Pepper to taste
- 2 Sub Buns
Instructions
- Chop up vegetables. In a skillet, warm 1-2 tbs of olive oil or butter & add vegetables. Cover with lid and cook on medium heat until softened, stirring occasionally. Season to taste.
- Cut steak into thin slices. In a skillet, cook meat over medium heat for 3-4 minutes on each side or until desired. Season to taste.
- Layer 2 pieces of cheese on both sides of the bun. Toast bun in the oven or toaster oven for ~3 minutes.
- Combine vegetables & meat in one skillet, stir together on low heat.
- Using a large spoon, add cooked ingredients to inside of bun. Enjoy while warm!
