Penne Rosa Zoodles

Ingredients

  • 2 large boneless chicken breasts
  • 3 medium zucchini
  • 3 tbs. olive oil
  • 24 oz. jar marinara sauce
  • 2 cloves garlic minced
  • 1/4 cup chicken broth
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 cup heavy cream
  • 1 cup tomatoes diced
  • 3/4 cup mushrooms
  • 2 cups baby spinach

Instructions

Zoodles

  • Using a handheld spiralizer or the ultimate spiralizer, individually spiralize each zucchini into noodles a.k.a “zoodles”
  • In a large skillet or saucepan, add 1 tbs. of olive oil and allow to warm over medium heat. Add zoodles to pan and sauté with tongs for 3-5 minutes until softened. Remove from heat.

Chicken

  • Cook on grill (hello summer!), in oven, or skillet. Cut in slices for four servings.

Penne Rosa Sauce

  • In a large saucepan, bring 2 tbs. of olive oil to medium heat. Add in garlic and cook until fragrant.
  • Mix in tomatoes, chicken broth, marinara sauce, & crushed red pepper. Cover with lid & allow to simmer for 10 minutes, stirring occasionally.
  • Stir in cream. Add mushrooms & spinach. Mix thoroughly & let cook until vegetables softened.
  • Serve over zoodles & top with chicken & sprinkled cheese.
