Copycat P.F. Changs Lettuce Wraps

Ingredients
- 1 cup Portabella mushrooms or any mushrooms
- 1 lb Ground chicken
- 1/2 yellow onion diced
- 3 cloves Garlic minced
- 8 oz. can water chestnuts finely chopped
- 3 green onions thinly sliced
- 1/2 cup carrots shredded
- Romaine lettuce large leaves
- 1 Tbs. Sesame oil
- 2 tsp. Rice wine vinegar
- 2 Tbs. Soy sauce
- 3 Tbs. Hoisin sauce
- 1 tsp. Sriracha additional to taste
- 1/4 cup coconut aminos
- 2 tsp. ginger
- 1 bundle bean threads
Instructions
- In a large skillet, add sesame oil & place on medium heat. Add yellow onions & cook for about 3 minutes or until slightly soften. Next, mix in mushrooms & cook additional 3 minutes.
- Add in ground chicken and cook thoroughly, crumble with spatula. Mix in carrots, green onions, & water chestnuts. Stir until carrots soften.
- In a mixing bowl, combine coconut amigos, rice wine vinegar, ginger, & Sriracha. Pour mixture over skillet ingredients & stir together.
- Rinse & chop bottom of lettuce. Using a large spoon, add chicken mixture to individual leaves- about 2 spoonfuls.
- For a morecarbohydrate dense option: make bean threads (fun transparent noodles!) by boiling a pot of water & cooking1 bundle of threads for 10 minutes. Serve chicken mixture over noodles.
