Ingredients

  • 1 cup Portabella mushrooms or any mushrooms
  • 1 lb Ground chicken
  • 1/2 yellow onion diced
  • 3 cloves Garlic minced
  • 8 oz. can water chestnuts finely chopped
  • 3 green onions thinly sliced
  • 1/2 cup carrots shredded
  • Romaine lettuce large leaves
  • 1 Tbs. Sesame oil
  • 2 tsp. Rice wine vinegar
  • 2 Tbs. Soy sauce
  • 3 Tbs. Hoisin sauce
  • 1 tsp. Sriracha additional to taste
  • 1/4 cup coconut aminos
  • 2 tsp. ginger
  • 1 bundle bean threads

Instructions

  • In a large skillet, add sesame oil & place on medium heat. Add yellow onions & cook for about 3 minutes or until slightly soften. Next, mix in mushrooms & cook additional 3 minutes.
  • Add in ground chicken and cook thoroughly, crumble with spatula. Mix in carrots, green onions, & water chestnuts. Stir until carrots soften.
  • In a mixing bowl, combine coconut amigos, rice wine vinegar, ginger, & Sriracha. Pour mixture over skillet ingredients & stir together.
  • Rinse & chop bottom of lettuce. Using a large spoon, add chicken mixture to individual leaves- about 2 spoonfuls.
  • For a morecarbohydrate dense option: make bean threads (fun transparent noodles!) by boiling a pot of water & cooking1 bundle of threads for 10 minutes. Serve chicken mixture over noodles.
