In a large skillet, add sesame oil & place on medium heat. Add yellow onions & cook for about 3 minutes or until slightly soften. Next, mix in mushrooms & cook additional 3 minutes.
Add in ground chicken and cook thoroughly, crumble with spatula. Mix in carrots, green onions, & water chestnuts. Stir until carrots soften.
In a mixing bowl, combine coconut amigos, rice wine vinegar, ginger, & Sriracha. Pour mixture over skillet ingredients & stir together.
Rinse & chop bottom of lettuce. Using a large spoon, add chicken mixture to individual leaves- about 2 spoonfuls.
For a morecarbohydrate dense option: make bean threads (fun transparent noodles!) by boiling a pot of water & cooking1 bundle of threads for 10 minutes. Serve chicken mixture over noodles.
