Crockpot Beef Stroganoff

Ingredients

  • 2 lbs beef stew meat
  • 1 cup beef broth low sodium
  • 1 large yellow onion chopped
  • 8 oz. crimini mushrooms
  • 8 oz. onion & chive cream cheese
  • 2/3 cup light sour cream
  • 1 cup heavy whipping cream
  • 1/4 cup Worcestershire sauce
  • 12 oz. egg noodles
  • Salt & pepper to taste

Instructions

  • In a large crockpot, place beef stew meat pieces, chopped onion, whole mushrooms, beef broth, 4 oz. cream cheese (1/2 required amount), & Worchestershire sauce.
  • Cook for 6 hours on low heat or 4 hours on high heat.
  • 20 minutes before end of cook time, add additional 4 oz. cream cheese, sour cream, & heavy whipping cream. Stir thoroughly and replace cover.
  • In a large pot, boil water & cook entire package of egg noodles until soft. After 20 minutes of added ingredients to crockpot have cooked, pour in all noodles & stir together.
  • Salt & pepper to taste. Serve while warm & pair with wine of choice.
