Family Dinner

While students at Carroll University (Go Pios!), a group of us started participating in weekly, “Family Dinners,” where we would each take a turn preparing a home cooked meal to share together, laugh a ton, & reveal our highs and lows of the day. Between school, sports, extracurriculars, & work, we all ran pretty busy schedules so this weekly get-together became a very special, much needed time, with friends. Although we have all graduated & ventured on our own paths across the country, technology has become a saving grace for staying in touch. One night while video chatting & our friends, Tyler & Katie, were making yet another, elaborate, 8-course-meal, I thought, “what if you guys did a cooking demo & we all, like, cooked together?!” Let it commence; the beginning of Virtual Family Dinners!

Both Carroll U Alumni, Tyler & Katie actually met while both working at a therapy clinic in New Berlin, WI. Katie graduated as an Occupational Therapist (OT) & Tyler graduated with a degree in Exercise Science with aspirations to pursue OT, too. Katie took a leap of faith & dove into travel OT (yay!), but the two still found time & traveled to see each other, often. Excitingly enough, Tyler was accepted into the Creighton University-University of Alaska Anchorage OT program! In the summer of 2019, the pair moved to Anchorage, AK, where they currently reside. Tyler began his first year of OT school this past fall & Katie works as an OT nearby. During their time in Alaska, Katie & Tyler have taken full advantage of all the beauty that surrounds them through hiking, camping, playing tour guide for family & friends, witnessing the Iditarod, & I’m certain, so much more!

Let’s just hope they survive their first full Alaskan summer filled with 24/7 daylight. Tyler… as a nurse, & your friend- I’m begging you. Please wear lots of sunscreen!!!

Okay… okay… they live a pretty cool life. But let’s get to the good stuff.

Ingredients

  • 1 Green Pepper, diced
  • 1 Red Pepper, diced
  • 1/2 Onion, diced
  • 2 Chicken Breasts, precooked & shredded with taco seasoning
  • 1 can Corn, rinsed
  • 1 can Black Beans, rinsed
  • 1 can Enchilada sauce
  • 1 pckg Mexican/Monterey Jack Shredded Cheese
  • 1 pckg Burrito or Soft Taco Tortillas (12" or 8")
  • 1 pckg Sour Cream

Instructions

  • Precook chicken in skillet or oven & season with taco seasoning. Using 2 forks, pull meat in opposite directions to shred completely. Set meat aside.
  • Preheat oven to 375.
  • Dice peppers and onions. In a medium sized pot, heat olive oil or butter in a skillet & cook vegetables until softened. Rinse canned corn & beans & add in to pot. Mix in *HALF* the can of enchilada sauce & save the rest. Remove from heat when combined thoroughly.
  • Lightly spray baking dish with cooking spray. Place 2-3 spoonfuls of enchilada filling in the middle of a tortilla in a straight line. Sprinkle 2-3 tbs. of shredded cheese on top. Fold one side over the middle & the other side over top. Gently turn the enchilada seam side down and place in baking dish. Repeat with other tortillas. (~6-7 burrito sized enchiladas should fit, more with taco sized tortillas)
  • Evenly pour the remainder of the enchilada sauce & sprinkle cheese on top of the enchiladas.
  • Bake for 12-14 minutues or until edges of tortillas are golden brown. While baking, prepare side dish of rice, refried beans, or dish of choice.
  • Remove from oven & allow to cool for 5 minutes. Using a spatula, gently seperate enchiladas & serve on plate. Top with sour cream. Enjoy!

Additional  Note:
In our recipe, we used the burrito sized tortillas, but will likely opt for taco sized next time!
Nutrition information varies depending on size of tortilla & amount of enchilada filling used. If using burrito sized tortillas, less will fit into a baking dish & you will likely have leftover enchilada filling unless you fill another dish. Contrastingly, is using taco sized tortillas more will fit in a baking dish. For most accurate nutrition information, create a recipe on MyFitnessPal & manually add ingredients & serving size used.
