Ingredients
- 3 roma tomatoes diced
- 1 orange bell pepper diced
- 1 cup sweet corn
- 2 avocados diced
- 2 tbs. cilantro chopped
- 1/2 a red onion chopped
- 15 ox. can black beans rinsed & drained
- 1/2 cup Italian dressing
- 1/2 juice of a lime
- Salt to taste
Instructions
- Chop & dice ingredients accordingly & add to a bowl.
- Pour dressing & squeeze the juice of half a lime on top. Mix thoroughly with a spoon.
- Serve with blue corn chips or over a freshly cooked piece of salmon.
