Rainbow Salsa

Taste the rainbow of fresh ingredients in this easy, flavorful, healthy summer salsa! Bring it to a cookout, enjoy it on the boat, or reel in your catch & layer it on top. Yummy!

Ingredients

  • 3 roma tomatoes diced
  • 1 orange bell pepper diced
  • 1 cup sweet corn
  • 2 avocados diced
  • 2 tbs. cilantro chopped
  • 1/2 a red onion chopped
  • 15 ox. can black beans rinsed & drained
  • 1/2 cup Italian dressing
  • 1/2 juice of a lime
  • Salt to taste

Instructions

  • Chop & dice ingredients accordingly & add to a bowl.
  • Pour dressing & squeeze the juice of half a lime on top. Mix thoroughly with a spoon.
  • Serve with blue corn chips or over a freshly cooked piece of salmon.
