Egg White Muffins

Perfect for busy individuals always on-the-go, now there’s no excuse to skip breakfast with these easy, low-cal, high protein, delish, Egg White Muffins!

Hi everyone!!! Whoa, it’s been a minute. At the beginning of August, I started a travel nursing crisis assignment in Los Angeles working 50 hours a week. Since I have been so busy, I decided to give myself some grace & use my days off of work wisely to rest & enjoy exploring the beautiful area around us.

With the new school year starting or a crazy workload, you might be a busy bee like me & value every extra second of time you have. We all know the saying, “breakfast is the most important meal of the day,” but when you’re short for time it’s easy just to skip it altogether or opt for a more convenient, yet less nutritious, alternative.

Introducing… Egg White Muffins! Fresh out of the oven in just 30 minutes total, these scrumptious lil’ things are guaranteed to fuel you up for a successful week. Even better, get creative & switch up the ingredients every week so your palette is always satisfied!

Equipment

  • Muffin pan

Ingredients

  • 2 cups Egg whites
  • 2 cups Spinach
  • 1 cup Multicolor Peppers, diced
  • 6 Turkey sausage links Johnsonville
  • 1/2 tsp. Everything but the bagel seasoning Trader Joe's
  • Salt/pepper to taste
  • 1/2 cup Tomatoes, diced

Alternate/Additional Ingredient Suggestions

  • Ham, diced
  • Bacon pieces
  • Mushrooms, chopped
  • Cheese, shredded

Instructions

  • Preheat oven to 350 degrees.
  • Chop spinach and peppers into small pieces. Spray a skillet with cooking spray & cook over vegetables over medium/low heat for a 3-4 minutes.
  • Cut sausages into ~6-8 small pieces per link.
  • In a bowl, mix together egg whites & spices.
  • Spray muffin pan with cooking spray or coat with butter. Fill each muffin hole ~1/2 full with egg whites. Spoon in 1-2 tbs. of cooked vegetables. Evenly distribute sausage into each hole.
  • Cook for 20-22 minutes or until golden brown. Allow to cool for 3-5 minutes, remove from muffin tin, & serve while warm.
